Scalloped Sweet Potatoes with Apples
The best side dishes for Thanksgiving use seasonal vegetables. Make a change from traditional mashed potatoes with this savory, aromatic make-ahead casserole.
Ingredients (serves 12)
- 6 large sweet potatoes (yams)
- 6 Granny Smith apples
- 1-1/2 cups dark or light brown sugar
- 2 tablespoons grated orange rind
- 2 teaspoons sea salt
- 1 teaspoon ground cinnamon
- 1/2 cup pieces of cut-up butter
Preheat oven to 350 degrees.
Cook potatoes in boiling water for 45 minutes. Drain, and allow them to cool slightly. Peel and cut into 1/4 inch thick slices.
Wash, peel and core the apples and slice into thin rings.
Lightly grease a 9 x 13 inch baking dish. In a large bowl, combine the sugar, orange rind, salt and cinnamon.
Layer half of the potato and apple slices (mixing evenly) in the baking dish. Sprinkle half of the brown sugar mixture, and dot with half the butter pieces. Repeat this procedure using the remaining ingredients.
Bake for one hour until potatoes are cooked through. Serve warm.
Zesty Green Beans with Fresh Lemon
Always serve a couple of healthy sides for guests who might have dietary restrictions.
Ingredients (serves 6)
- 2 pounds fresh green beans with ends trimmed
- 1 tablespoon olive oil
- 3 tablespoons salted butter
- Minced garlic (2 large cloves)
- 1 teaspoon red pepper flakes
- 1 tablespoon fresh lemon zest
- Freshly ground pepper and dash of salt to taste
Using a large pot, blanch the green beans in boiling salted water until they turn a bright green color and are tender crisp (about 2 minutes). Drain, and remove to a bowl of ice water to stop the cooking process.
Heat a large skillet over medium heat. Add the oil and butter, then the garlic and red pepper flakes, sautéing until fragrant for about 30 seconds. Add the chilled beans and sauté until the beans are coated with the mixture and heated through, approximately 5 minutes.
Add the lemon zest and seasonings. Serve immediately.
Easy Chunky Cranberry Relish
This delicious and low-cost recipe can be made ahead and stored for up to one month.
Ingredients (makes 4 cups)
- 1 pound fresh or frozen cranberries
- 1-1/2 cups apple juice
- 1 cup granulated sugar
Combine all the ingredients in a large saucepan for one of the easiest Thanksgiving side dish recipes to add to your menu. Using a low heat, simmer until the cranberries burst open and the sauce thickens into a jam-like consistency (about 20 minutes).
Transfer the mixture to a heat-proof bowl and let cool. Refrigerate until chilled.
