All are excellent for adding distinctive flavor to meat, and fish dishes, gravies, soups, salads, and vegetables. They are fun to grow and make an attractive garden addition! Common Name: Epazote. You can use the leaves, unripe fruits and flowers. Air drying is common, using fresh is recommended. Used in Mexican cooking, most commonly used in black bean soup to lessen the side effects of beans. One teaspoon of dried epazote equals one branch or seven leaves. A very strong scent of citrus/petroleum, however, the taste is a mixture between oregano and savory. Epazote can also be grown indoors, on the windowsill. How to Germinate: Direct plant in garden or seed tray that is 2.50 inches deep or deeper. Fill will a high quality germination mix, pack lightly, water tray, place seed on top of the germination mix, cover lightly. To hold moisture cover the tray with plastic wrap or clear dome cover. After the seed germinates remove the cover. Be careful when watering or you will wash your seed into the corner. Use a mister, it is very hard to see small seed.
